Mango Wine आम से बनी वाइन की खासियत है कि इसमें प्रचुर मात्रा में मौजूद एंटीऑक्सीडेंट और पॉलिफिनॉल्स इसे हार्ट, कैंसर और स्किन की बीमारियों से लड़ने में सक्षम बनाते हैं। अगर आम से शराब बननी शुरू हो जाती है तो इसका काफी फायदा किसानों को मिलेगा। किसानों की आय में भी बढ़ोतरी होगी।

  • Mango Wine उत्तर प्रदेश सरकार की आम से भी शराब बनाने की तैयारी के बीच अच्‍छी खबर है। काशी हिन्‍दू विश्‍वविद्यालय (बीएचयू) के वैज्ञानिकों ने लंबे शोध के बाद लंगड़ा और दशहरी आम से वाइन तैयार करने में काफी हद तक सफलता पा ली है। इसे विश्‍वविद्यालय की एथिकल कमिटी को मंजूरी के लिए भेज दिया गया है। वहां से मंजूरी मिलते ही कुछ और परीक्षण के दौर होंगे। इसके बाद इसका उत्पादन शुरू किया जा सकता है। आम से बनी वाइन की खासियत है कि इसमें प्रचुर मात्रा में मौजूद एंटी ऑक्‍सिडेंट और पॉलिफिनॉल इसे हार्ट, कैंसर और स्किन की बीमारियों से लड़ने में सक्षम बनाते हैं। अगर आम से शराब बननी शुरू हो जाती है तो इसका काफी फायदा किसानों को मिलेगा। किसानों की आय में भी बढ़ोतरी होगी।

  • Mango Wine बीएचयू के सेंटर ऑफ फूड साइंस एंड टेक्नॉलजी डिपार्टमेंट के वैज्ञानिक तमाम तरह के खाद्य पदार्थों को लेकर शोध में जुटे हैं। उत्तर प्रदेश में आम की बंपर फसल पर शोध के दौरान यह तथ्‍य सामने आया है कि हर साल 30 से 40 फीसदी आम खराब हो जाते हैं। ऐसे में संरक्षण के लिए आम के प्रॉडक्‍ट तैयार करने के दौरान आम के जूस में अंगूर की तरह अल्‍कोहल के अलावा हेल्‍थ टॉनिक के गुण मौजूद मिले। शोध आगे बढ़ने पर पता चला कि दशहरी और लंगड़ा किस्‍म से बनी वाइन में 9 से 12 फीसदी तक अल्‍कोहल रहेगा। यह बाजार में उपलब्‍ध सामान्य बीयर से अधिक है लेकिन अंगूर से बनी वाइन से थोड़ा कम होगा।

  • Mango Wine आम से वाइन बनाने वाले शोध की अगुवाई करने वाले सेंटर ऑफ फूड साइंस ऐंड टेक्नॉलजी डिपार्टमेंट के असिस्‍टेंट प्रोफेसर अभिषेक दत्त त्रिपाठी ने इस पर शोध किया। उन्होंने बताया कि आम की 6 किस्‍मों पर कई साल से शोध चल रहा है। बंगनपल्‍ली, नीलम, तोतापरी, दशहरी और लंगड़ा से प्रॉडक्‍ट तैयार करने के दौरान पता चला कि लंगड़ा और दशहरी में वाइन और हेल्‍थ टॉनिक की सभी खूबियां सबसे ज्‍यादा हैं। शुरुआती शोध से साफ है कि आम से बनी वाइन पीने वालों की सेहत भी अच्‍छी रहेगी, क्‍योंकि इसमें पर्याप्त मात्रा में एंटी ऑक्‍सिडेंट और पॉलिफिनॉल मौजूद होगा।

  • Mango Wine प्रो. त्रिपाठी का कहना है कि आम से बनी वाइन को बाजार में उतारने के लिए कंपनियां संपर्क कर रही है, लेकिन इसे अभी कई मापदंड पर खरा साबित करने को और परीक्षण की जरूरत है। यह विश्‍वविद्यालय की एथिकल कमिटी की मंजूरी मिलने पर ही संभव हो पाएगा। जहां तक इसको तैयार करने पर आने वाले खर्च का सवाल है तो यह ज्‍यादा नहीं होगा। कमर्शल प्रॉडक्‍शन होने पर आम से बनी 650 एमएल की वाइन की बोतल की बाजार में कीमत दो सौ रुपये के आसपास होने का अनुमान है।
