Namakwali उत्तराखंड़ की संस्कृति को सहेजकर देश के कोने-कोने तक पहुंचा रही हैं ‘नमकवाली महिलाएं’ , एक कहानी है उत्तराखंड़ की नमकवाली महिलाओं की.. जो अपनी संस्कृति को सहेजकर उसे आने वाली पीढ़ियों तक पहुंचाने का प्रयास कर रही हैं और साथ ही उससे रोजगार भी कमा रही हैं।
Namakwali औरतों के इस नमक की दीवानी है दुनिया
- Namakwali दरअसल, टिहरी गढ़वाल की रहने वाली शशि रतूड़ी ने साल 1982 में महिला नवजागरण समिति की शुरूआत की, जिसके तहत वो पहाड़ों की कई कलाओं और संस्कृतियों को सहेजने के अलावा ग्रामीणों को रोजगार दिलाने का काम कर रही हैं। इसी के तहत उन्होंने एक नई पहल की शुरूआत की जिसका नाम रखा गया “नमकवाली” बता दें कि, नमकवाली करीब 10-12 औरतों का एक समूह है जो खास पहाड़ों में कई बरसों से बनते आ रहे पहाड़ी नमक (जिसे पिस्यु लूण कहा जाता है) को तैयार करके ऑनलाइन मार्केटिंग के जरिए देश के अलग-अलग कोनों में भेजती हैं। इससे ना सिर्फ गांव की महिलाओं को रोजगार मिल रहा है बल्कि, उत्तराखंड़ के बाहर रोजगार की तलाश में गए लोगों को भी पहाड़ों से दूर शहरों में इसका स्वाद चखने को मिल रहा है।
Namakwali नवजागरण समिति की रेखा कोठारी ने की Namakwali की शुरूआत
- Namakwali रेखा कोठारी अपनी शादी से पहले से ही महिला नवजागरण समिति का हिस्सा हैं। उस वक्त जब वो हर दिन समिति में काम के लिए या मीटिंग के लिए जाया करती थी। तो वो हमेशा अपनी मां के हाथ का बनाया पिस्यु लूण लेकर जाती थी। वहां जब शशि ने इस नमक को चखा तो ना सिर्फ उन्हें बल्कि बाकी सभी महिलाओं को भी इसका स्वाद बेहद पसंद आया। रेखा कोठारी चंबा गांव की रहने वाली हैं उन्होंने खुद भी अपनी मां से इसको बनाने की रेसिपी सिखी और समिति में काम करने वाली बाकी महिलाओं को भी इसे बनाना सिखाया। पिस्यु लूण बनाने की रेसिपी पारंपरिक हैं। जिसे सिलबट्टे पर ही पीसा जाता है। और इसे बनाने के लिए अलग-अलग तरह की कुल 10 चीजों का इस्तेमाल किया जाता है।

सामग्री
सरसों के दाने: 3-4 चम्मच
समुद्री या सेंधा नमक (पाउडर): 1-2 चम्मच
लाल मिर्च (भुनी हुई): 2-3
Namakwali विधि: सरसों के दाने को मध्यम आंच पर एक पैन पर तब तक सेकें जब तक वे फूट न जाएं। उसे ठंडा हो जाने दें। इसे पीसने वाले पत्थर पर अन्य सामग्री के साथ पीस लें। इसे एक एयर-टाइट ग्लास जार में भर लें। घी के साथ, चावल या चपाती पर परोसें।

पहाड़ी हरी मिर्च: 2-3
कुछ धनिया पत्ती
अदरक (1 इंच)
जीरा: 1 चम्मच
समुद्री या सेंधा नमक (पाउडर): 1-2 चम्मच
Namakwali विधि: सभी सामग्री को एक साथ पीस लें। चाट, ककड़ी और अन्य फलों पर इसे इस्तेमाल कर सकते हैं। इसे धूप में भी सुखाया जा सकता है और एक महीने तक स्टोर किया जा सकता है। इसे घी के साथ मिलाएं और चावल या चपाती के साथ परोसें।
